Simple Cabbage and Chickpea Soup with Fresh Basil

The day after his 14th birthday, my e daughter leaned against the door of my Office and said, "Let's go on a diet together."

I was stunned by murmur: "it is unnecessary to go on a diet." You are a size 0. If you get very small, you'll have ceased to exist. »

"I know." I do not want to lose any weight. But it would be fun to do together. »

I knew where it came from. Earlier that day, she had lunch with a friend and "awesome mom his friend" who had a low carbohydrate diet as a whole.  It looked like his vegetarian friend all cheeses and vegetables from his sandwich on a piece of bread and eaten it open. She told me to lunch in detail, and I could say that there was something on the relationship between the mother and daughter that appeals to it, it is something that she wanted to share with me. And although the idea of his departure this way all power at his age I fear of death, I have said, "How about a cabbage soup diet."  I never dreamed she would say yes, but it did.

Note that I said "a" cabbage soup diet and not "the" cabbage soup diet, regardless of who is. Our plan was simply to eat soup cabbage once per day for a week and do not limit in any way. I thought that this would be a way to get more vegetables in her diet food "sandwich for lunch." It had been years since she had allowed me packaged soup in his lunch box, but now she asked me even offering to eat for breakfast.  More important still, it give me a chance to show that Canada "diet" a person is not a loss of weight, but healthy eating. If I had seen any sign that it is actually not to lose weight, signs of body image issues, would have backed off the coast of the idea and he sat down to a long discussion. But she simply wanted to enter the kitchen to make our soup together.

Immediately, I have decided that our cabbage soup would contain beans for protein, tomato lycopene and a bit of extra fat, as pine nuts. E sautéed onions and other vegetables while I made the cut, and together, we decided that some of our garden Basil would be best for our "pesto soup", as e seasoning called it.

Like any other e had a helping hand in manufacturing, she enjoyed this soup.  She ate two bowls of it for lunch Sunday, the first day of our "system" and took to school for lunch Monday, with a few whole grain crackers, a granola bar and an apple-a nutritious meal for a teenager.

I still don't know that I did the right thing in allowing a 14 years old to go on a diet, even if it is without restrictions. But I figure in our society conscious of their body, of his friends more will talk about a diet regime, and so I could show her at the outset that it is adding vegetables and healthy fruit, pills or meal of drinking boxes dangerous step.

Update: We had this soup for lunch Sunday and Monday and Tuesday I did a potato-cabbage soup that was, in terms of E, an epic failure. We both ate it anyway, but no there was no way we were choking it down again Wednesday, therefore nous we went services flexibility. I am another pot of this soup to cabbage today, since it was such a success, and we will have some for a snack this afternoon.

Simple Cabbage and Chickpea Soup with Fresh Basil

1 onion, chopped2 carrots, cloves of garlic cloves, minced nails or pressed6 sliced4 cups warm water (more cubes of broth, below) or vegetable broth (and no broth cubes) 3 cubes without salt added broth cubes (or enough to taste 6 cups of water) * 1/2 cabbage, chopped1 15-ounce can diced tomatoes1 16-ounce can chickpeas, rinsed and drained (or 1 1/2 cup cooked chickpeas) 2 tsp oreganogenerous network black pepper1/3 cup fresh basil, chopped2 tbsp pine nutsslightly grilled heat (optional) a large, non-stick pot. Add onions and Cook, stirring, for about 3 minutes. Add the carrots and garlic and cook for two minutes. Add the remaining ingredients except the Basil and pine nuts. Cover and simmer until vegetables are tender, about 25 minutes.Stir in fresh basil and serve in individual bowls of soup, topped with a spoonful of pine nuts, if desired.*I used 3 cubes (6 servings) Rapunzel non-sel vegan Bouillon of vegetables, which contain 25 calories, 2 grams of fat and 130 mg per serving. Nutrition (per serving): 158 calories, 42 calories from fat, 4.8 g total fat, 0 mg cholesterol, sodium 495.9 mg, potassium mg 274.6, carbohydrate 23.2 g, fiber 4.9 g, 4.7 g sugar, 6.2 g protein, 2.8 points. (Includes 2 grams of fat of pine nuts).
